Also known as the spider steak, the oyster steak consists of a cool little semi-circle woven with a web of intramuscular fat. There are only two of these babies per beast. It's small but flavourful thanks to it's natural marbling. Very easy to prepare with a quick pan sear.
Tri tip is a triangular cut of beef cut from the bottom of the sirloin. Rich and meaty in flavour, with a thick fat cap, tri tip cooks like a tender steak but slices like a brisket.
