Sascha’s Sweet and Spicy Stir-fried Beef

Ingredients
  

  • 500 g Stir fry beef
  • Sesame oil - or ghee or whatever oil you prefer
  • half onion - finely sliced
  • 1 carrot - diagonal cut
  • 1 celery stalk - diagonal cut
  • 2 cloves garlic - chopped
  • 2 capsicum - finely sliced
  • 1 stalk bok choy - sliced
  • 1 spring onion - finely sliced lengthwise, soaked in water
  • 1 tsp Szechuan or black peppercorn - crushed
  • 1 Tbsp Chinese 5 spice
  • 2 Tbsp chilli paste or 1 fresh chilli - more if desired
  • 2 Tbsp Soy sauce or Tamari
  • 3 Tbsp soft honey
  • 2 Tbsp oyster sauce - optional
  • splash of HengShun or rice vinegar - to deglaze pan
  • 1/4 cup water

Instructions
 

  • In a bowl, add all the beef and some soy sauce to marinate and give color. Set aside.
  • Cut all veggies, get everything ready
  • Heat up wok or pan with oil, add handfuls by handfuls the beef until all browned. Do not overcook. Set aside
  • Fry all veggies, starting with carrots, celery and Capsicums then onions. On med-high heat. Cook until almost translucent.
  • Add beef with spices, garlic, chili, soy sauce, cook on high heat for a few mins. Add bokchoy last
  • Deglaze with vinegar and some water and bring to medium heat
  • Add honey and oyster sauce. Quick stir
  • Taste and season
  • serve on rice or with noodles, garnish with fresh spring onions and Sesame seeds.

Notes

Optional: Add a soft boiled egg or avocado.
